Eating Healthy At Home Is Hard

I really do love eating healthier in general, I can feel the difference it makes in my mood, my body, and I really just love how it makes me feel as a whole. It’s unfortunate that food that isn’t as good involves so much less effort. I’m not saying it’s always this way but a good chunk of the time it feels like it.

I do my best to switch out certain things to “healthier” versions – coconut oil, coconut sugar, whole wheat flower, organic foods that don’t have artificial colors or sweeteners, etc. But sometimes as a mom I feel like I can only handle so much. My priority isn’t always on making those super healthy home cook meals, although man…do I love them.

That’s why I love little recipes like this muffin in a mug I stumbled across one day, and the fact that I tweaked it to turn it into a pumpkin muffin – umm YES PLEASE! But seriously, minimal ingredients and takes less than 5 minutes to make, that’s what I’m talking about. I know, there are more easy healthy recipes out there – I just need to hunt for them. Until then, I want to share this one with all of you out there crunched for time, trying to be healthy, and just wanting to enjoy some pumpkin flavored goodness!

Here’s the breakdown:

1 tbsp coconut oil
4 tbsp whole wheat flour
2 tbsp coconut sugar
½ tbsp pumpkin spice
1/8 tsp baking powder
Pinch of baking soda
½ tbsp pumpkin puree

3 tbsp milk

Mix batter until thick – make sure not too over mix.

In microwave: cook on high for 1 minute.

In oven: cook at 350 degrees for 17 minutes.
